Study of germination and antioxidant activity of iron-fortified soybean (Glycine max) germs

چکیده

Abstract Iron deficiency in human diet is a serious problem leading, among others, to the development of iron-dependent anaemia, which affects 1.8 billion people worldwide. Biofortification crop plants, including edible sprouts, promising strategy for combating dietary deficiencies. The aim present study evaluation effect seeds imbibition FeCl 2 solution with Fe at concentrations 100 and 500 mgL −1 on germination, growth seedlings, their antioxidant activity level total phenolics flavonoids. results show that pre-treatment leads increased accumulation this metal germinated seedlings. In addition, it germs On other hand, had no germination rate, seedlings or phenolic content (TPC). indicate obtaining Fe-enriched soybean sprouts.
